Ingredients
Main Ingredients:
- 1 cup chana dal (split chickpeas/Bengal gram)
- 1 cup sugar (adjust to taste)
- 1/2 cup ghee (clarified butter)
- 2-3 cups whole milk
- 1/2 cup water
For Flavoring:
- 4-5 green cardamom pods, crushed
- 1/4 teaspoon ground cardamom powder
- Pinch of saffron strands (optional)
- 1 tablespoon rose water (optional)
For Garnish:
- 2 tablespoons chopped almonds
- 2 tablespoons chopped pistachios
- 1 tablespoon raisins
- Silver leaf (varak) - optional
Instructions
Step 1: Prepare the Dal
- Wash chana dal thoroughly under running water until water runs clear
- Soak the dal in water for 2-3 hours
- Drain and rinse the soaked dal
Step 2: Cook the Dal
- In a heavy-bottomed pot, add the soaked dal with 2-3 cups of water
- Cook on medium heat for 20-25 minutes until dal is completely soft and mushy
- Mash the cooked dal well or blend briefly to get a smooth consistency
- Set aside
Step 3: Prepare the Halwa
- In a large, heavy-bottomed pan or karahi, heat ghee over medium heat
- Add the cooked dal mixture to the ghee
- Cook while stirring continuously for 8-10 minutes until the mixture starts to thicken
Step 4: Add Milk and Sugar
- Gradually add warm milk while stirring constantly to prevent lumps
- Add sugar and mix well
- Continue cooking on medium-low heat, stirring frequently
- Cook for 15-20 minutes until the mixture thickens and starts leaving the sides of the pan
Step 5: Final Touches
- Add crushed cardamom, cardamom powder, and saffron
- Add rose water if using
- Cook for another 2-3 minutes
- The halwa is ready when it has a thick, pudding-like consistency and ghee starts separating
Step 6: Garnish and Serve
- Transfer to a serving dish
- Garnish with chopped nuts and raisins
- Add silver leaf if desired
- Serve warm or at room temperature
