Ingredients

For the Dough
- 4 cups all-purpose flour
- 2 tsp instant yeast
- 1 tsp salt
- 1/4 cup sugar
- 1 cup warm milk
- 1/4 cup vegetable oil
- 2 large eggs (room temperature)
- Extra egg for egg wash
For the Chicken Filling
- 500g halal ground chicken
- 1 large onion, finely chopped
- 3 green chilies, finely minced
- 2 tbsp ginger-garlic paste
- 1/4 cup fresh coriander leaves, chopped
- 2 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 2 tbsp cooking oil
Preparation Steps
Preparing the Dough
- In a large mixing bowl, combine:
- Flour
- Instant yeast
- Salt
- Sugar
- In a separate bowl, mix:
- Warm milk
- Vegetable oil
- 2 eggs
- Gradually add wet ingredients to dry ingredients
- Knead for 10-12 minutes until smooth and elastic
- Place in a greased bowl, cover with a damp cloth
- Let rise in a warm place for 1-1.5 hours until doubled in size
Preparing the Chicken Filling
- Heat oil in a large skillet
- Add chopped onions, sauté until golden brown
- Add ginger-garlic paste, cook for 1 minute
- Add ground chicken, break into small pieces
- Add spices:
- Garam masala
- Turmeric powder
- Red chili powder
- Salt
- Cook until chicken is fully done and moisture evaporates
- Add chopped coriander leaves
- Let filling cool completely
Assembling Chicken Buns
- Punch down risen dough
- Divide into 12-15 equal portions
- Roll each portion into a circle
- Place 2-3 tablespoons of chicken filling in the center
- Carefully fold and seal edges, creating a bun shape
- Place on a baking sheet, sealed side down
- Let buns rest for 30 minutes
- Brush with egg wash
Baking
- Preheat oven to 375°F (190°C)
- Bake for 20-25 minutes until golden brown
- Remove from oven, let cool for 10 minutes
